TORTILLIA SOUP!

Okay so for those of you who haven't tried this, it's one of my husband's favorite meals! I got it from the internet and edited it a little... The recipe calls for you to make your own tortilla chips and heck, for all of you mom's, you know that we just don't have time for that , on top of making soup! lol.. Well anyways here's the recipe hope you enjoy it!

Tortilla Soup

Ingredients

Tortilla Chips, preferably Mission Tortilla Strips
1/4 cup peanut oil or vegatable oil
1 small onion, chopped
(1/2 cup)2 cloves garlic
3 or 4 finely chopped green chiles (Depending on the hotness and flavor desired. You can also put more.)
4 cups chicken broth or homemade chicken stock
1 can (14.5 oz) diced tomatoes, undrained
1/2 teaspoon salt
1 1/2 cups shredded cooked chicken-( I usually buy the already cooked whole chicken from staters or sam's club)
1 ripe medium avocado
1/2 cup shredded Monterey Jack cheese (2 oz) (or other mild, melting cheese)
Chopped fresh cilantro
1 lime, cut into wedges

2 Heat oil in saucepan over medium-high heat. Cook onion in oil 2 minutes, stirring frequently. Add garlic and chile; cook 2 to 3 minutes, stirring frequently, until vegetables are crisp-tender. Stir in broth, tomatoes and salt. Heat to boiling. Reduce heat; cover and simmer 15 minutes. Add chicken; heat until hot.
3 To serve, peel and pit the avocado. Cut into 1-inch slices. Divide half of tortilla strips among 4 individual serving bowls; ladle in soup. Top with avocado and cheese; garnish with remaining tortilla strips and cilantro. Serve with lime wedges.
Serves 4.

Enjoy!!!

THANKS!! I'm sure mine won't be as incredible as yours but I'll give it a shot. And of course, we'll miss the company from our tortilla soup parties last September. ;)

I'm glad you posted this. I wanted to make it again but couldn't quite remember everything. It really is SUCH GOOD soup.
